Carrot Cake Zucchini Bread Oatmeal Using the Solar Flare Parabolic Solar Cooker

A great recipe to sneak veggies into your diet or to use up excess from your garden.  It really does smell like carrot cake or zucchini bread and it’s delicious!  

Carrot Cake Zucchini Bread Oatmeal

Serves 2 – large servings

½ cup steel cut oats

1-1/2 cups vanilla flavored nondairy milk (coconut, almond, rice, or soy)

1 small carrot, grated

¼ small zucchini, grated

Pinch of salt

Pinch of nutmeg

Pinch of ground cloves

½-1 teaspoon cinnamon

2 tablespoons brown sugar or maple syrup

¼ cup chopped nuts (walnuts, pecans, almonds)

Prepare one cooking vessel by coating with cooking spray or oil.  Combine oats, milk, carrot, zucchini, salt, nutmeg, cloves, cinnamon, and brown sugar in a cooking vessel.   Cook for about 1-1/2 hours.  Top with chopped nuts before serving.


If you don’t have vanilla flavored milk, use regular milk plus ½-1 teaspoon of vanilla extract.  You may also use agave nectar or honey in place of brown sugar or maple syrup.

Tip: It is recommended to check the cooking vessel about 45 minutes or 1 hour into the cooking process.  If there is condensation in the bag check the food.  Let cooking vessel rest 2-3 minutes, then open jar and stir contents to check if done.  If more time is needed, cook for an additional 10 -20 minutes then check again.
