Braised Beets Using the Solar Flare Parabolic Solar Cooker
If you are looking for something delicious and healthy in the produce aisle – pick up some beets. Beets are a good source of folate, manganese, potassium, fiber and vitamin C – nutrients that help protect against heart disease, birth defects, and certain cancers. While these root vegetables are known for their purple-red color, beets come in other hues, including white and golden-yellow. They are wonderful in salads, on a cheese plate, or on a sandwich. Before storing your beets remove the greens. The greens will leach the moisture from the beets causing them become dry and brittle.
4 small beets, peeled and slice ¼-inch thick
Grated zest of 1 orange
½ cup fresh orange juice
3 tablespoons rice vinegar
2 sprigs fresh thyme or 1 teaspoon dry thyme
Stir together orange zest and juice, vinegar, and thyme. Add beets and stir to coat with liquid. Cook about 1 hour and 15 minutes or until beets are tender. Discard braising liquid before serving.
Tip: It is recommended to check the cooking vessel about 45 minutes or 1 hour into the cooking process. If there is condensation in the bag check the food. Let cooking vessel rest 2-3 minutes, then open jar and stir contents to check if done. If more time is needed, cook for an additional 10 -20 minutes then check again.
