Asian Tofu Soup

This soup is SO easy to prepare using the Solar Flare Parabolic Solar Cooker.  It is SO good for you! 

Did you know ginger is good for your stomach?  This a good soup to substitute for chicken soup when you are feeling under the weather.

Did you know that mushrooms have immune-enhancing and cancer-protective properties, particularly Asian mushrooms like Shiitake?  All mushrooms should be cooked to receive nutritional benefit.  

This soup calls for Shiitake mushrooms.  These meaty and flavorful mushrooms contain a substance called eritadenine, which encourages body tissues to absorb cholesterol and lower the amount circulating in the blood. Shiitakes also have antiviral and anticancer effects. Dried shiitakes, available at Asian grocery stores, are also effective. Fresh ones are readily available thanks to domestic cultivation. (To prepare, remove stems or slice fresh ones thinly; they are often tough.)

Asian Tofu Soup

Serves 4

1-inch piece of fresh ginger, peeled and sliced

2 cloves of garlic, minced

6-8 shiitake mushrooms, stems removed and caps sliced

1 block tofu, drained and cut into cubes

1 tablespoons chicken bouillon

1-2 teaspoons soy sauce

4 cups water

Sliced scallions for serving

Prepare ginger, garlic, mushrooms, and tofu and add to cooking vessels.  Stir together water, bouillon, and soy sauce; add to cooking vessels.  Cooking 1 hour until heated through.   Top with scallions before serving.

Tip: It is recommended to check the cooking vessel about 45 minutes or 1 hour into the cooking process.  If there is condensation in the bag check the food.  Let cooking vessel rest 2-3 minutes, then open jar and stir contents to check if done.  If more time is needed, cook for an additional 10 -20 minutes then check again.
